Bake Something Fun, share it with the world, and {maybe} win an awesome new apron.
First of all, I'm happy to announce last month's Bake Club winner: Karla Johnson. (Karla has been notified and her prize is on the way.)
For all of you who participated in last month's challenge to make the classic Napoleon, I hope you had as fun making them as I did looking at the pictures!
Two of you took on the challenge by making puff pastry from scratch - SO impressive. A couple of you made them for baby and bridal showers. One woman made 8 Napoleons for a retirement party. And one of you turned the recipe into 6 mini-napoleons, a brilliant idea that I might have to try. And a bunch of you used the challenge as an excuse to bake something delicious "just because", which is wonderful.
A few of you had challenges with your puff pastry getting too brown, but all of you loved the pastry cream. All-in-all, I feel that the second Bake Club challenge was a success and can't wait to see pictures of this month's selection.

Perfect Vanilla Layer Cake with Italian Meringue Buttercream

I know that the April Bake Club challenge was also a layer cake with Italian Meringue Buttercream, so I hope you'll forgive me for choosing another. But, a few of you wrote to tell me that the April challenge was the first time making Italian Meringue Buttercream and that you were looking for an excuse to make it again so you could try out different flavors. So here's the deal with this month's challenge...
Bake this Vanilla Layer Cake OR Gluten Free Vanilla Cake and ice it with Italian Meringue Buttercream, sticking to vanilla if you like (as pictured here), or choose to make any other flavor of this gorgeous, creamy icing. Towards the end of this post about how to make Italian Meringue Buttercream, before the recipe, you'll see a list of 11 different flavor ideas. Choose one of those suggestions, or let your creativity loose and come up with your own.
The cake itself is my go-to vanilla cake recipe. It's sturdy enough to stack into a tall layer cake, and yet still maintains a super tender, moist crumb. It also packs a TON of flavor thanks to the use of butter, whole eggs, buttermilk, a lot of vanilla, and the smallest hint of lemon and nutmeg.
