This month's challenge is all about squeezing out the last drops of summer. The buttery muffins are packed with diced fresh peaches and baked with a cobbler topping that melts into the batter as they bake, creating a kind of chewy, crispy, brown sugar cookie top.
The muffins are perfectly delicious without the peach sauce. But, the peach sauce makes them about 100% better. It's just like the saucy inside of a cobbler and turns the muffins into something much more than just a muffin.

And, I'm in love with these bakery emulsions. The red velvet emulsion is a key ingredient in my favorite Red Velvet Cake recipe. And in recent months I've been experimenting with several of the other emulsions with great success.
Emulsions are water based and have a stronger flavor than most extracts, but you can use them at a 1-to-1 ratio: 1 teaspoon extract = 1 teaspoon emulsion.
