Thank you for the GF cookie recipes. I constantly try to alter my regular recipes for my celiac daughter with mixed results. Baking is a challenge. Cookies, cakes etc only last a day or two before they are to dry to eat. I hope these cookies last a few days.

I've had the same issue with many gluten free recipes Kimberly. Many gluten free flour substitutions just don't hold moisture well causing baked goods to go stale quicker. My suggestion would be to try a few of the cookie recipes here that are completely flourless - like #1, Chewy Chocolate Brownie Cookies, #3, Flourless Fudge Cookies, #13, Chocolate Peanut Butter cookies, #27, Italian Almond Macaroons, and #39, Argentinian Alfajores.
The other option is to try cookies that are meant to be nice and crisp - like #9, Amaretti Cookies, and #14, Gingerbread Shortbread.
