Homemade Cinnamon Rolls
Easy overnight recipe
Ingredients for the dough:
2 cups milk, at room temp 1/2 cup sugar 3 1/2 tsp active dry yeast 1 egg + 1 egg yolk 6 tbsp salted butter, melted 6 cups all-purpose flour 2 tsp kosher salt
Add milk, sugar, and yeast to a bowl. Stir, and let stand for 5 minutes, until the yeast is creamy.
Add egg, egg yolk, and melted butter...
And 5 cups of flour.
Mix and knead the dough by hand or with an electric mixer that's been fitted with the dough hook.
As you knead, add more flour until the dough comes together in a soft, slightly sticky ball.
Sprinkle in the salt and continue to knead for 8-10 minutes longer.
Form the dough into a ball, set it inside a buttered bowl, cover, and let it rise at room temperature until doubled in size.
Ingredients for the filling:
1/2 cup sugar 3 tbsp ground cinnamon 3/4 tsp kosher salt 1/2 cup butter, melted
Roll the dough into a rectangle and spread it with melted butter.
Mix sugar, cinnamon and salt and sprinkle it over the dough.
Roll the dough into a log and cut into 12 pieces.
Set the rolls into a buttered baking dish, cover, and put them in the refrigerator to rise overnight.
The next morning, let the rolls sit at room temperature for about 30 minutes while preheating the oven to 375 degrees.
Bake for 40 - 50 minutes then remove from the oven and let cool slightly.
Slather the rolls with cream cheese buttercream...
Or serve with the frosting on the side.
