Roll out a pie crust and fit it into a pie plate, crimping the edge so it sits about 1-inch higher than the pie plate.

Core, peel, and slice about 3 pounds of apples, tossing the apples in some lemon juice to prevent them from turning brown.

Pile the apples into the pie crust, gently pressing them into the crust to really pack them in there.
