Jumbo Chocolate Chunk Banana Muffins with Streusel

Description

These Jumbo Chocolate Chunk Banana Muffins topped with buttery brown sugar streusel are incredibly easy to make and perfect for weekday breakfasts.


Ingredients

FOR THE STREUSEL

FOR THE MUFFINS

  • 3 1/2 cups unbleached all-purpose flour
  • 2/3 cup granulated sugar
  • 2/3 cup stevia
  • 4 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 6 medium to large size bananas
  • 2/3 cup butter (10 2/3 tbsp) at room temperature
  • 4 tbsp milk
  • 4 eggs
  • 10 oz dark chocolate chunks or dark chocolate chips(at least 60% cocoa)

Instructions

FOR THE STREUSEL

  1. Combine all the dry ingredients in a small bowl. Pour in the melted butter and mix until all the dry ingredients are moistened. Cover, and set aside.

FOR THE MUFFINS

  1. Preheat the oven to 350. Line 12 jumbo muffin cups with paper liners.
  2. Put the flour, sugar, stevia, baking powder, baking soda and salt in the bowl of a standing mixer. Stir to combine.
  3. Add bananas, butter, milk and eggs and beat on low speed until blended, then on medium for 30 seconds. Stir in the chocolate chunks.
  4. Distribute batter evenly into muffin cups. Top with streusel.
  5. Bake for 35 – 40 minutes, until a toothpick inserted in the middle of one of the muffins comes out clean.
  6. Cool on a wire rack in the pan for at least 10 minutes. Remove muffins from the pan and let cool completely.
