The January 2021 Bake Club Challenge Recipe...

I have two nieces who love to bake and this past December, I went over to their home to bake Christmas cookies with them. Actually, I should say, THEY baked the cookies. I visited with their mother and ate the cookies they baked. 🙂
While they baked and decorated tray after tray of cookies, I asked them if they had an opinion about what the January Bake Club challenge recipe should be. They didn't really have an opinion on the matter until Christmas morning. I made a couple of these Lemon Loaf Cakes and they told their mom that they hoped the cake would be the next challenge recipe. Of course, I was more than happy to comply.
This simple loaf cake really is the perfect thing for January. It’s sweet, but not overly so. Bright and lemony. Tender and perfectly sliceable. Appropriate to to eat with your fingers or with a plate and fork. The batter takes about 20 minutes to mix up, and the loaf will stays fresh and delicious for days.

I love this bundt pan so much and want to use it in the dead of Winter more than any other time of year because it makes me feel like it's actually Spring.
