Healthy Chocolate Banana Muffins that taste like birthday cake even though they are low sugar, low fat, high in fiber and high in protein.

  1. Preheat oven to 375 and line 2 muffin tins with 21 paper liners or spray with non-stick baking spray.
  2. In a medium size bowl, combine all the dry ingredients and mix with a wire whisk to combine.
  3. In the bowl of a standing mixer fitted with the paddle attachment, add the bananas, butter, applesauce, yogurt and eggs. Beat on medium speed until fairly smooth (there will still be some chunks of banana) and well combined, about 2 minutes. Add the chocolate and vanilla and beat to combine.
  4. Add the dry ingredients to the batter and mix on low speed just to combine.
  5. Fill muffin cups 3/4 full. Bake for 20 minutes, until a toothpick inserted in the center of one muffin comes out mostly clean. Remove to a wire rack to cool.

  1. Stir the cocoa powder and powdered sugar in a medium bowl to combine. Add the milk and vanilla and stir with a wire whisk until smooth.
  2. When the muffins are completely cool, drizzle each with a teaspoon or so of the glaze.
