A flatbread is a type of bread made from a simple dough that's rolled out into a flattened shape. Most flatbreads are cooked at high heat for a short amount of time.

Many flatbreads are unleavened, like these flaky cheese crackers. But the category includes leavened bread such as pizza and pita bread. In my home, the flatbread that we make the most often is soft, homemade flour tortillas.
